[JessFinds] Meal Planning - 1st Week of June (ish)

Slow start to the meal planning this week, but here is the general idea:

Thursday:
Baked Burrito Enchiladas
These are no-brainers. Whole grain flour tortillas, refried beans, taco-seasoned meat (or in our case "smart ground') with sauteed onions, shredded cheese, black olives, sour cream, enchilada sauce. Preheat oven to 350, Assemble burritos, place in a 9x13 pan w/ 1/3 of the enchilada sauce on the bottom (to prevent sticking), cover with sauce, cheese, olives. I go very light on the cheese. 25 min.  Serve with salsa, hot sauce & sour cream.   

Friday:
Fresh Mozz, Basil & Tomato Sandwiches w/ Marinated Asparagus
I was at the beach the other day with some of my favorite people and they whipped these out for their beach dinner. Yum. Get good FRESH mozzarella, basil and tomatoes. I went with bagel thins sandwich bread. You can use any type of seasoning but I am doing a balsamic vinegar/ black pepper/ olive oil combo on these. Marinated Asparagus comes from a metabolic cleanse class I took - Trim a bunch of spears, 1/2 cup olive oil, 1/4 cup Braggs amino acids (or soy sauce), 1 clove of garlic crushed, 1 T grated ginger and about half a lemon squeezed. Mix sauce in a blender, pour over the spears and marinade for at least 20 min up to 1 day. No cooking!
Editors note: Freakin' Peapod did not bring the Mozz. Had impromptu guests, ended up with NY Style Pizza instead... sigh. Best laid plans! 

Saturday:
Hot Dogs / Black Bean Burgers w. Watermelon & Cowboy Caviar
All the gear for grilling. Cowboy Caviar is simply black-eyed peas, shoepeg corn, cilantro, red onion, olive oil, red wine vinegar, salt, pepper, cumin, garlic. Some add chopped tomatoes.  

Sunday:
Veggie Potstickers & Cold Sesame Noodles w. Broccoli
I wish I could claim I was making these from scratch, but I am just getting a frozen package. I have not made potstickers in ages - really should do that some weekend.

Monday:
Khichardi (lentils, rice, curry) & Chopped Salad
I am thinking about doing a crockpot version of Khichardi since I could just dump everything in there and leave it until evening. I am using regular lentils.

Tuesday:
Taco Night
Doesn't everyone have taco night? Easy.  I am tempted to cook up some frozen shrimp I have for these tacos, but it makes me want coleslaw shredded cabbage to go in the shells with a creamy ancho sauce. I did not order cabbage or anchos in this week's Peapod order. If motivated, I will brave the grocery store.

Wednesday:
Whole Grain Penne Pasta w/ Vodka Sauce & Chopped Salad
Toss a bunch of roasted veggies in to a simple Vodka sauce (spiced with a bit of cayenne). Also good tossed with ricotta cheese and baked.

Just in case I ever wanted to copy, do you have calorie counts on these menus? Can't fix anything around here anymore without giving Jesse the calorie counts. Inconvenient, but he has lost over 40 lbs.

I throw things together with a Jamie Oliver/Nigella Lawson abandon and I rarely follow a strict recipe. Even so, I would think that with simple, straightforward ingredients it would be pretty easy to calculate out the calorie counts. For example, you pick out a multigrain tortilla, 2T of vegetarian refried beans, etc... and should be able to work out a ballpark.
