[JessFinds] Summer Food - Cajun Shrimp Boil


I am now officially addicted to summer Shrimp (crab, lobster, etc...) boils.

We used the Louisiana brand boil seasonings but I am also eager to try Slap Ya Mama and the one we just saw on the Food Network (Alton Brown) for a Crawfish Boil with a homemade spice recipe.

Last night's boil for 20 went something like this:

Turkey fryer (w/ insert) filled 2/3 with water
Add 2 packets of the Louisiana brand seasonings
2 tablespoons of the Louisana brand seasoning oil concentrate
Bring to a full boil

Add:
4 heads of garlic w/ the tops cut off (and much of the skin removed)
Boil for 15 min.

Add:
Approx. 2 small red bliss potatoes per person (we used about 35)
Boil for 8 min

Add:
Aprox. 1/2 ear of corn per person (we used ten)
Boil for 5 min.

Add:
Sausage - we used 4 pkgs. Polish Kielbasa. Each rope cut in to about 12 pieces.
Boil for 8 min.

Add:
3 onions quartered
2-3 lemon's halved (squeeze juice in to the pot, throw the lemons in)
Boil for 3 min.

Add:
Shrimp. We used SIX pounds of Large easy peel n' eat shrimp. Tail on and deveined.
Boil for 5 min.

Pull out the insert and let the water drain off. Pour contents out on to a paper covered table or on to a big tray (or two) and let people dig in.

You will want extra sliced lemons, cocktail sauce, butter, salt, pepper, tobasco or other hot sauces. Best with cheap beer.
